Scott Wright, then manager
of the ARA affiliated Snack
Bar, explained to Grizzard
that "the low score received
was due in part to not being
staffed during the summer.

health inspector on June 16.
The inspector gave the Snack
Bar a score of 63 out of 100,
where a 70 is considered
passing.
KSAT-12 news reporter,
Hollis Grizzard aired a story a
week later featuring St.
Mary's University Snack Bar.
The Snack Bar was featured in
the KSAT weekly special,
Behind the Kitchen Door , a
segment which targets
establish-ments recently
inspected by the San Antonio
Health Department.
Grizzard, a KSAT-12 reporter
receives a folder each week
with a list of the restaurants
which are rated the highest
board of trustees and
proposed that the raising of
money, planning, and
constructing of a student
center take priority over the
other components of the
capital campaign - such as the
gym, and beautification of
Treadaway courtyard.
The total cost of the
proposed student center and
gymnasium has been
estimated at 28.5 million
dollars.
Due to a current re-cession
in Texas, raising the large
amounts of monies for the
facilities is difficult.
At the board of trustees
meeting on September 11,
James' goal was to persuade
the board of trustees to
consider building the 7
million dollar student center
as the first phase of the 28.5
million dollar complex. The
capital needed to construct the
gym, could be raised over a
longer period of time.
James stressed the
importance of a new student
center to enhance the physical
and financial growth of St.
Mary's.

so happened to score the
lowest for that week, with a
63.
Mr. Beard, at the San
Antonio Health Department
explained, "a score of 70 is
passing, while a 63 is below
average." Beard also
commented that, "an
establishment must have at
least one major discrepancy to
fail. Even with several minor
ones, most places still pass."
Included in the list of faults
found by the health inspector
were temperature control
problems, a faulty refrigerator,
and dirty tables. The
inspector also saw a need for
paper towels for the
employees to wipe their
hands with and for Scott
Wright, ARA manager for the
Snack Bar, who ran
